Running, Redoing, Recipes, Reading...

I have started back running on a regular basis now that the weather has cooled off.  I have a hard time running in the summer, I just don’t like the humidity and I’m not an early enough riser to do it in the morning and by the time it cools down at night, I just don’t want to do it.  I love running…not so much the thought of having to do it but I love when I’m actually running, when I’m done and how strong it makes my body feel…it is amazing what the body is capable of.  I have to get up to 6 miles by Thanksgiving so that I can do my annual Turkey Day run with Karen.  Hopefully this year, we will not get in a fight and yell obscenities to each other while running in the middle of thousands of people!  Love you Karen!

 As I said on Facebook, apparently one cannot sew just because they watch Project Runway.  In an attempt to make saint costumes for my kids for school, I tried my hand at sewing with a machine.  It was the most aggravating experience trying to work a sewing machine.  So I gave that up, time to “redo” with a different plan so used Stitch Witchery.  Even that didn’t hold.  Redo again with the old needle and thread. By the time I got to Izzy and Gia’s they just get a hole cut out in the middle of a piece of fabric!  But I am going to contact the cooperative extension office and find out when they offer sewing lessons.  I’m going to learn!

I did 4 recipes for “Thursday night dinner with Mom and Dad” with Karen and Martha joining as well.  I got a surprise guest when my brother Keith walked in the door.  No refereeing soccer last light.  Soccer is to Keith what golf is to Dad…an obsession.  No one had to bring anything because I wanted to make 4 things in the stack.  I made Cabbage-Kielbasa Chowder, Vegetable Salad, Ciabatta bread and Cherry Cheesecake Pudding Pie and I’m happy to say ALL ARE KEEPERS.  It was a good meal.

Here are the recipes:

Cabbage-Kielbasa Chowder (I cut this recipe out of the newspaper)

¾ lb kielbasa or any smoked sausage, cut into slices
2 medium potatoes, diced (2 cups)
1 medium onion, chopped
1 ½ tsp salt
Pepper to taste
2 cups water
1 small head cabbage, shredded (4 cups)
3 cups milk
3 tbsp flour
1 cup shredded Swiss cheese

In large Dutch oven, stir together sausage, potatoes, onion, pepper and water.  Bring to a boil, reduce heat, cover and simmer 20 minutes.

Stir in cabbage and cook another 10 minutes or until tender.  Stir in 2 ½ cups milk.  Blend together remaining ½ cup milk with flour and stir into soup.  Cook until thickened and bubbly.  Stir in cheese until melted.  6 servings.

Vegetable Salad – I have no idea who this recipe came from but it is a handwritten recipe in the stack.  I think it may be my mother-in-law; I’ll have to ask her:

½ cup carrots finely chopped
1 large can white shoepeg corn, drained (I found that shoepeg only comes in one size so I used 2 since I wouldn’t consider the can “large”)
1 large can French sliced green bean, drained (yea, I know, canned green beans, yuck, but it works)
1 large can tiny peas, drained (ok, I used frozen, I just don’t like the color of canned peas)
1 large green pepper, chopped fine (I used red pepper because I like it better)
1 bunch green onions, chopped fine
1 cup celery, chopped fine

Put all in a non-metal bowl.

Dressing:

¾ cup granulated sugar
¾ cup vinegar
1 tbsp water
1 tsp each salt and pepper
½ cup oil

Put all ingredients except oil in pan.  Bring to boil.  Cool.  Slowly drizzle in oil while whisking.  Pour over veggies.  Cover and store in fridge.  Do ahead-improves with age.

I found that I had a lot of liquid so I drained off the liquid before serving.

Ciabatta – I LOVE baking and especially love making bread and pizza dough.  I really like the whole kneading process.  Ciabatta is a very wet dough so I did this in my Kitchenaid.  I have never used my Kitchenaid for bread, it was awesome.  But I still love kneading.  This bread did not rise as much as I thought it would but it may have been my fault.  After forming into loaves, I did not cover for the rise and it formed a bit of a “skin” on the outside which may have prevented it from rising fully.  It was good bread, the kids LOVED it.  After it was done, I sliced it and baked it at 450 until crispy and rubbed it with garlic when it came out, ending with big croutons for our soup.

Sponge:
1 ½ cups unbleached all purpose flour
1 cup water
¼ teaspoon instant active yeast (not rapid rise)

Mix together the ingredients and let rest overnight in a covered bowl at room temp.

Dough:
Take sponge and add:
1 tsp yeast
1 ½ cups unbleached all purpose flour
1 ½ tsp salt
1 tsp sugar
¼ cup water
1/8 cup olive oil

Dough should be between a batter and runny dough.  I mixed in my mixer with the dough hook for 5 minutes.  Shape into 2 loaves, long, rough ovals about 4x10 inches.  Form on oiled baking sheet.  Cover and let rise until light and bubbly, using your fingers poke indentations in dough all over about ½ way thru the rising period.  Bake in a preheated oven spraying with water once or twice during baking.  Bake 25 minutes then cool in turned off oven with door cracked open.  Dust with flour.

Cherry Cheesecake Pudding Pie
1 ½ cup cherry pie filling (can use strawberry or raspberry)
1 graham cracker pie crust (6 oz)
1 ½ cups cold milk
2 pkgs (4 serving size) cheesecake flavored instant pudding
1 tub (8 oz) Cool Whip

Spoon ½ cup pie filling into crust.  Pour milk into large bowl.  Add pudding mix.  Beat with wire whisk 2 minutes or until smooth.  Mixture will be thick.  Immediately stir in whipped topping.  Spoon over pie filling in crust.  Refrigerate 3 hours or until set.  Top with remaining pie filling.

So, you think you can sew?

I think I've bit off more than I can chew.  The kids have to dress up as saints every year for school around Halloween.  I figured I could make generic cloaks for each of them and we can accessorize year after year with the various and assorted items that make up the saint they choose.  I watch Project Runway... so obviously I know how to sew!  (I'm rooting for Mondo!)  I will keep you posted on my progress, I cut out the pattern for one tonight and I'll begin to sew tomorrow.  And no, I don't even know how to thread the machine!

I stopped by Mom's to get the sewing machine and while I was there, I retrieved one of recipes Mom used to make and I love...Barbecued Butter Meatloaves.  I had that with grilled zucchini and pasta.  And my poor mini-Weber...look how I have to prop her up. 

Earl and Beth gave me their big Weber but I just don't have the heart to part with my baby.  We got it out of the trash when we lived in Price Hill and it has served me well!


Meatloaves:
2 pounds ground beef
2 eggs, slightly beaten
1/3 cup chopped green pepper (I omitted)
1/4 cup milk
1/4 cup ketchup
1 1/2 tsp salt
1/4 tsp pepper

Mix everything together.  Form into 8 loaves.  Place on foil.  Top each with onion slice.  Spoon sauce over loaves.  Reserve some sauce to service with meal.  Seal.  Cook over indirect coals for 25 minutes.

Butter Barbecue Sauce
1 stick butter
1/2 cup chopped onion
1/4 cup ketchup
1/4 cup packed brown sugar
1 1/2 tsp chili powder
3 tbsp Worcestershire sauce
1 tsp salt
1/8 tsp pepper

Place butter in sauce pan over medium low heat and cook until butter is melted and sugar is dissolved.

Tried and True...Recipes, Friends, Husband

I had a lot of tried and true happenings this week so let's get started...

First, for "Thursday night dinner with Mom" which I'm now going to have call "Thursday night dinner with Mom and Dad" since golf season is now over, I just didn't have the energy to pull out the recipe stack to try something new so I stuck with these two recipes, which I make quite often and are delish...plus, I didn't have to make a trip to the grocery store because I usually gave everything on hand for these recipes. 
Asian Marinated Grilled Chicken and Fried Rice.  I don't actually make mine kabobs, I just use the marinade recipe but add 1/4 tsp ground ginger, 1/4 tsp granulated garlic and a little red chili paste for heat.  I use chicken thighs.  For the rice, I add whatever veggies I have on hand, which that night was carrots, onions and zucchini with a little fresh snipped chives on top (from my garden). 

 Dinner was followed by a GW trip, where pants and skirts were 99 cents.  SCORE!  2 pair of pants for work, leggings, a skirt (LOVE the a-line 60's look of this skirt) a pair of lounge pants and some Adidas pants for winter running.
 Last night was my 25 year high school reunion.  And let me say, I have the best husband and friends!  It was all about Nancy last night.  At 5:30 Joe drove me to Mainstrasse so I could have a beer with one of my best friends, Jay (shout out Jay, you're supposed to be reading this!).  My friend Deb picked me up at the bar and drove me to the reunion.  It was great to see everyone and a good time was had by all.  At 11:00 Joe came and picked up me and my friends and drove us out to Boogie Nights, where we danced the night away.  Boogie Nights was followed by Anchor Grill and finally home at 4:30am!  Joe had to stay up and make spaghetti and meatballs for the men's retreat at church PLUS he had to go into work tonight with no sleep.  AND he has to get up tomorrow and cook some more.  But he drove me and my friends around and I love him for being so good to me!  I had a camera with me and only took one pic...of me and Jay...

I am dead tired today and have pretty much be laying around doing nothing...which is exactly what I plan to do for the rest of the day!

Keeneland and Keepers (NOT!)

Thursday night was "Mom comes over for dinner and I try a new recipe" night.   NOT a keeper.  Not that it was bad, but if I wanted to have a taco, I'd make a traditional taco and be done with it. 

 Salsa Pizza and Cheese Crust:
1 pound ground beef
1 1/4 cups think & chunky salsa
2 cups Bisquick
1/4 cup mild salsa or jalapeno flavor process cheese spread
1/4 cup hot water
1 cup shredded Colby-Monterey Jack cheese
Shredded lettuce, chopped tomatoes, if desired

Heat over at 375.  Brown beef, drain, stir in salsa.  Stir baking mix, cheese spread and water until soft dough forms.  Knead 5 times.  Roll into 14" circle, place on greased cookie sheet.  Spread beef within 2" of edge.  Fold edge over beef.  Sprinkle with cheese.  Bake 25-28 min or until gold brown.  Top with lettuce and tomatoes.

Friday I took the day off work and headed down to Keeneland
with my girlfriends and husbands.  Kristy and Jan have been my
friends for over 25 years.  We met when we were freshman in high school. 
I feel very fortunate to have life-long friends.  We didn't win anything but it was a BEAUTIFUL day and company was awesome!
 

I also made some cookies to take down to Keeneland (for tailgating before the races) and this also was NOT a keeper.  I love lemons but these cookies were just not sweet enough for me.  The funny part is the top of the recipe says "Keeper Recipe"...liars!

Lemon Meltaways
Cookies:
1 1/4 cups AP flour
3/4 cups butter, softened
1/2 cup corn starch
1/3 cup powdered sugar
1 tbsp lemon juice
1 tsp grated lemon peel
Frosting:
3/4 cup powered sugar
1/4 cup butter, softened
1 tsp fresh lemon juice
1 tsp grated lemon peel

In large mixer bowl combine all cookie ingredients.  Beat at low speed, scraping bowl often, until well mixed (2 to 3 minutes).  Divide dough in half.  Shape each half into 8x1" roll.  Wrap in plastic.  Refrigerate until firm (1-2 hours).

Heat over to 350.  With sharp knife, cut each roll into 1/4" slices.  Place 2" apart on cookie sheets.  Bake for 8-12 minutes or until set.  Cookies will not brown.  Cool completely.

In a small mixer bowl combine all frosting ingredients.  Beat at medium speed, scraping bowl often, until fluffy.  Frost cooled cookies.

Lastly, I found this game at GW.  My kids LOVE playing this when we go over our friends house so I was excited to see it and pick it up for $5.

Chili and a Campfire...in 90 degree weather

There has been a whole lot going on so I haven't posted in a while.  Let's start with last weekend .  Joe and I decided the fall season called for chili and a campfire with friends...to bad it was 90 degrees out!  Unseasonably warm but still fun was had by all.  And it must have been purple shirt day because 3 of us wore one!

Damn Chicken Enchiladas!

I've been reprimanded...by my mother...for saying "damn" too much.  Marge has read the blog and says the word "damn" is in everyone one of my posts.  Well, I'll be damned...

Sis was in town so I had her, Mom and Dad and sis-in-law Martha over for dinner.  So I went to the recipe stack and picked out Cottage Cheese Chicken Enchiladas.  But it's not a keeper.  It may be my own fault.  See, I hate dry enchiladas, the dish only called for one can of enchilada sauce, I used 2...should have used 1 1/2...WAY to soupy.  Other modifications were I used green instead of red sauce, used thighs instead and breast and baked them instead of boiled them.  Personally, I think thighs are way better, tastier and cheaper.  And Kroger Family Value chicken is the best; always moist and tasty.  Karen supplied the veggie and Martha the cake.   We certainly ate well even if we felt like we were eating chicken enchilada dip!

The trip to GW after was successful for Karen, she bought 3 pair of jeans to wear to work for $6.  I usually don't buy stuff unless it's on special but I couldn't pass up this necklace for $5.  I can wear it with silver or gold!

Now on to my next project...make Isaac's Halloween costume, I'll keep you posted.

Indians and Peacoks

Well, not really Indians, but a really tasty Indian dinner.  At our church festival in September, we signed up for a 5 course Indian dinner cooked by Father Baiju Kidaagen from St. Pius X parish.  It really was delicious and I wish I would have saved the menu with the course descriptions.  In keeping with the theme, I brought along some Indian beer (I never usually show up to a gathering without beer and I didn't want to walk in with my usually Bud, I wanted to be sophisticated!)  My cube mate at work, Justin, recommended it and the reco was spot on.  Very good beer if you haven't tried it!
 
Afterwards, we went to Peecox and had a few drinks, played a couple rounds of pool and just enjoyed each others company!  I was in the theme with my peacock styling and being at Peecox!

Friday night and nothing to do...but I still did a lot!

So, we had nothing to do tonight, aside from Izzy going to her first dance up at the firehouse.  So I took the opportunity to do a little cooking and test a few recipes from my "stack".  My goal was to not make a trip to the grocery store and still be able to make a dent in my stack.  Whenever I grocery stop, I always check out the cheapie bin in the meat section.  I found some boneless pork ribs for $1.53 and brought them home and froze them.   So I thought this receipe was a good way to use them:

Vinegar Sauce

2 cups cider vinegar
1 1/3 cups water
1/2 cup plus 2 tablespoons ketchup
1/4 cup firmly packed brown sugar, or more to taste (I probably ended up using about 1/2 to 3/4 cup)
5 teaspoons salt
4 teaspoons red pepper flakes (I only used 1 tsp since the kids would be eating it.  It had some heat at 1 tsp so I would think 4 would make it pretty damn hot!)
1 teaspoon ground black pepper
1 teaspoon ground white pepper

Combine all ingredients and whisk until sugar and salt dissolve.  Taste and add more salt and sugar as needed.  Refrigerate until needed.

I ended up warming the sauce on the stove to really dissolve the sugar and salt.  I used about half the sauce to cook the ribs, covered, at 300 degrees for about 2 1/2 hours, then I took off the cover and cooked for another 30 minutes.

I also do some gardening and still have cherry tomatoes growing like mad.  I didn't even put the plant in the ground, it sprung from my compost I put in the garden in the spring.

So, since I had an abundance of tomatoes to use and some basil to use before it dies, I made this recipe.  It's not from my stack but I still had everything in the house to make it.


I used feta instead of gorgonzola.  It's a keeper and so pretty!

One more receipe from the stack.  Dessert.  I have no idea where I got this receipe but I obviously wrote it down in a hurry, I don't even know what it is called!  They were a little time consuming to make and the marshmallow busted out of some, but consesus was they were tasty and reminded Joe of a cinnamon roll with the icing on the inside!  I did have to make a trip to the grocery for the crescent rolls!

2 - 8 oz crescent roll dough
1/4 cup sugar
1 tsp cinnamon
1/4 melted butter
16 large marshmallows

Separate dough into 16 pieces.  Dip marshmallow in butter and roll in cinnamon sugar mixture.  Wrap dough around and tightly seal.  Dip seal side in butter.  Place that side down in muffin pan.  Bake 350 degrees for 10 minutes.  Make a glaze with powdered sugar/milk and top with nuts.

Then, Joe and I hung out on the back patio and listened to the game.  I went to bed so early and missed the text that there was drinking going on in the driveway up the street!  Damn!  So, for a friday night with nothing to do, I did a lot!

GOOD TIMES. GOOD RECIPES. GOODWILL, GOOD FIND?

So, I’m not as up on this blogging thing like I thought I would be…Fall TV started.  So excited that Amazing Race is back (Karen and I WILL be on that one day…I will keep watching the application deadline and NOT miss it this time!).  Gotta love Modern Family and one of my new favorites is Mike & Molly…I think it’s pretty damn funny.  Then I have to get in LA Ink, Project Runway, it’s all too much!  And I DVR too!  The Glades is stock piled in the DVR so have to get those watched too.  And what about Sister Wives…

We have been so busy in September, Labor Day, day trip to Cumberland (see Karen’s boobs in previous post!), Erica’s wedding (all my kids were in it and we had so much fun!), a camping trip with neighbors last weekend and this Sunday Joe has the annual Spaghetti Dinner at San Antonia.  So, here we go…

Good Times

Erica’s wedding was beautiful, wonderful and a good time was had by all.  I know the bride was beautiful, but take a look at my kids…how did we make these 3 amazingly cute kids???











We also went camping at Kincaid Lake with a couple neighbors (shout out Wetzel’s and Wyatt’s!).  And…I did not take pictures.  I don’t’ know why, I had my camera…I guess it goes back to me not being very sentimental. 

Good Recipes

I’ve dug into the recipe pile and have 2 keepers:

I took this snack mix on the camping trip and everyone seemed to like it. 

Tex-Mex Snack Mix

½ cup butter or margarine, melted
½ tsp chili powder
½ tsp cumin
½ tsp garlic powder
¼ tsp oregano
3 cups Crispex cereal
1 ½ cups cheese balls
1 ½ cup corn chips
1 ½ cup mixed nuts

Mix seasonings with melted butter.  Place cereal, corn chips, cheese balls and nuts in a mixing bowl.  Pour butter mixture over cereal mixture and mix well.  Spread onto a baking sheet and bake in 250F oven for 45 minutes, stirring every 15 minutes.  Cool and store in airtight container.

I also made this recipe for my Thursday night dinner with Mom and Dad and it turned out good as well.  I made it with pork instead and we served ours over cabbage and had fried rice on the side:


Goodwill and good find?

I hit pay dirt…Nine West Mary Jane wedges, looks like they’ve never been worn…$2 (remember, I’m so cheap that I generally only buy the stuff at GW that is on daily special!)

Good find?  Not so sure…I do this sometimes…they were such a good deal that I couldn’t pass them up but they are 8 1/2 and I can sometimes wear an 8 ½ but generally I’m a 9.  I wore them to work the other day and they hurt my right foot.  However, I always have some trouble with running injuries in that foot so I’m going to give it another try!  If they still hurt, it’s donated back to GW and it only cost me $1 each time I wore them!

I bought this jacket last night ($3.50) and got the inspiration from a DNKY ad and some other faux leather items I’ve seen in my bible (Glamour!) the past few months.  I’d like to style it with my peacock items and think they look pretty good together.   I’m SO sick of always wearing my jean jacket and I wanted something different.  What do you think of the jacket?

And Beth M., in answer to the question you always ask, I generally only go to one GW so I can’t really comment about any of the others.  I never do that well in Florence.  But I don’t know if I want to give away my secret GW location in risk that others will learn my secret!  Remember to always get the calendar when you go in so that you know what is discounted every day of the week!  And remember, sometimes you win, sometimes you lose.
